I believe in cinnamon weather. It’s that time of the year when you want to go for nature walks wearing a thick sweater, drink spiced tea cuddled up on the sofa with the smell of fresh baked treats coming from the kitchen. Cinnamon and autumns golden sun.
Baking has always been a passion of mine. The last few years I’ve done it less often. However this year with everything that is going on I’ve been more inclined to cook, as well as bake.
This apple pie is a take of the classic Dutch Appeltaart. With the exception of the decoration leaves the top layer is not a crust in the way that the rest of the outer layer of the pie is. It is a mix of flour, a wee bit of salt, some butter, golden brown sugar and cinnamon. That mixed into a crumble. The crust bottom and sides are on the thick side, which is how we like it here in our house. I actually think this was the best pie I’ve ever eaten and that says a lot. I’m a pie lover!
